APPLE BUTTER
Muffins
Ingredients:

1 1/2 cups all purpose white flour
1/2 cup whole wheat flour
1 1/4 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups grated carrots
1 apple, cored, peeled, and chopped
1 cup raisins
1 large egg, lightly beaten
2 large egg whites, lightly beaten
1/4 cup Harvest Crafters Apple Butter
1/4 vegetable oil
1 tbsp. vanilla

Preparation:

Preheat oven to 375" (190"C).
Lightly oil 18 muffin cups.

In a large bowl, stir together flours, sugar, baking powder, baking soda and salt.
Stir in carrots, apples and raisins.

In a medium-sized bowl, whisk together eggs, egg whotes, Harvest Crafters Apple Butter, water, oil and vanilla.
Add to dry ingredients.
Stir just until moistened.

Spoon the batter into the prepared muffin cups, filling them about 3/4 full.
Bake for 15-20 minutes or until tops are golden brown and spring back when lightly pressed.

Yields 18 muffins.
